Some day I want to live on a farm and have my own chickens. Then I can go out every morning and collect fresh eggs (I like the blue ones best) for my breakfast.This is a great recipe to make for your parents on Sunday morning…especially if they’re a little cranky. It cheers them right up.Then it’s off to the Newburyport Farmers Market and that cheers everybody up!

 

Egg In The Nest with Veggies

One serving

1 slice of your favorite bread
1 Tablespoon each of butter and olive oil
1 large egg
3/4 cup of mixed chopped veggies,you could use onions,peppers,carrots, zucchini,spinach,tomatoes,etc.
salt and pepper
1/4 cup shredded cheddar

Find a small glass(like a juice glass).Turn it upside down and cut a hole in the middle of the bread. Melt the butter and oil in a frying pan and put the bread in.Crack the egg into the hole in the bread and pour on the veggies.Sprinkle on some salt and pepper. Cook over medium heat until the egg starts to get firm.Use a spatula to flip the whole thing over. When egg is cooked the way you like it turn it over again and put the cheese on top. Put a lid on the pan and turn off the heat.In a minute the cheese will be melted. Have fun!
