The movement to Local Food and Slow Food is a world wide phenomenon. It sounds a bit contradictory – ‘local food is going global’ -but its true. Its good to have place to learn from and maybe we can share an idea or two as well.

Smoking fish is a well established culinary tradition world wide. Except not so much in our part of New England it seems. Smoked Striper, Scottish style smoked Haddock, even smoked Mackerel ….all taste great and are a great way to preserve some of your family fisherman’s seasonal catch for use at other times of the year.
